Ackee Fritters (Crocfast)

As part of our partnership with the Jamaica-UK Rugby 7s team, we have created this amazing ackee 'crockfast'. Combine this energetic dish with a hand-made jerk yoghurt dip sauce to start a day like a real Croc warrior!


• 280g Ackee

•1/2 cup plain flour

•1/2 cup gram flour

•1 tsp baking powder

• 3/4 cup soya milk

•1 tbsp ground coriander

•1/2 tsp red crushed chilli flakes

•1/2 tsp dried thyme

•2 cloves garlic, puréed

•Oil, for shallow frying


1. Add the plain flour, gram flour, baking powder, soya milk, coriander, chilli flakes, thyme, and garlic to a bowl and whisk well to form a smooth batter. Drain the ackee and add into the mix. Whisk again to break up the pieces, leaving some small lumps.

2. Add oil to a frying pan for shallow frying over a medium-high heat.Add a heaped tablespoon of batter to the pan and flatten slightly. Cook for 3-4 minutes, the flip over and cook for a further 2-3 minutes until cooked through.

3. For a quick and simple jerk yoghurt dip, mix 1/2 cup soya yoghurt with 1/3 tablespoons of Tropical Sun Jerk Seasoning.
