Ingredients
- 250g boneless salted codfish
- 100ml Tropical Sun Vegetable Oil
- 4 tsp of Tropical Sun Minced Garlic Paste
- 1 sprig fresh thyme, chopped
- 2 onions, chopped
- 4 spring onions, chopped
- 150g assorted bell peppers (red, green, yellow, orange), chopped
- ½ scotch bonnet pepper, seeded and finely chopped
- 540g Tropical Sun Ackee, drained
- 1 tsp Tropical Sun Ground Black Pepper
- 1 tsp Tropical Sun Paprika
Instructions
- Wash off the salt from the salted cod fish in cold water, and then soak for an hour in hot water
- Drain and then replace the water with a new batch of hot water to soak for another hour
- Heat the oil in a frying pan and add in the garlic paste and sauté for 30 seconds
- Add in the thyme and sauté for another 30 seconds
- Add in the onions, spring onions, bell peppers and scotch bonnet pepper and simmer for 5 minutes
- Remove the fish from the water and add into the pan, simmering for 5 minutes
- Add in the ackee and simmer for 2 minutes
- Add in the black pepper, stir thoroughly and turn off the heat
- Garnish with paprika
- Serve and enjoy!
