Ackee & Saltfish

Classic Jamaican dish!

Instructions

  1. Wash off the salt from the salted cod fish in cold water, and then soak for an hour in hot water
  2. Drain and then replace the water with a new batch of hot water to soak for another hour
  3. Heat the oil in a frying pan and add in the garlic paste and sauté for 30 seconds
  4. Add in the thyme and sauté for another 30 seconds
  5. Add in the onions, spring onions, bell peppers and scotch bonnet pepper and simmer for 5 minutes
  6. Remove the fish from the water and add into the pan, simmering for 5 minutes
  7. Add in the ackee and simmer for 2 minutes
  8. Add in the black pepper, stir thoroughly and turn off the heat
  9. Garnish with paprika
  10. Serve and enjoy!
