A creamy, garlicy dip; the most delicious part of tapas! (don't hate us, it's true!)

Serves: 4-6 | Prep: 15 mins | Origin: Mediterranean | Vegetarian

Aïoli_Tropical Sun



All ingredients must be at room temperature.


  1. Put the egg yolks, minced garlic, salt, apple cider vinegar and mustard into a bowl
  2. Whisk whilst slowly adding in the olive oil in a steady stream until a shiny emulsion has been achieved, for approximately 10 mins  
  3. Season with cayenne pepper and lemon juice to finish
  4. Serve and enjoy!

Serve With

  • Calamari
  • Patatas bravas
  • Raw vegetable batons (cucumber, carrot, celery)
