Aubergine Fries

Some serious happy-snacking!

  1. Mix the salt, coriander, cumin, smoked paprika, cayenne pepper and flour in a bowl
  2. In a separate bowl, beat together the two eggs
  3. In a third bowl, mix the breadcrumbs and garlic salt
  4. Heat the oil in a wok on medium-high heat
  5. Dredge the aubergine strips first in the flour mixture, then the egg and lastly coat in the breadcrumb mixture
  6. Fry in the wok until aubergine are golden brown and tender. Drain on a kitchen towel
  7. Serve with your choice of dipping sauce
