Ingredients
- ¾ tsp salt
- 1½ tsp ground coriander
- 1½ tsp cumin
- 1½ tsp Tropical Sun Smoked Paprika
- ½ tsp Tropical Sun Cayenne Pepper
- 100g flour
- 2 eggs
- 250g Tropical Sun Golden Breadcrumbs
- ¾ tsp Tropical Sun Garlic Salt
- 200ml Tropical Sun Rapeseed Oil
- 1 aubergine, cut into thick chips
Instructions
- Mix the salt, coriander, cumin, smoked paprika, cayenne pepper and flour in a bowl
- In a separate bowl, beat together the two eggs
- In a third bowl, mix the breadcrumbs and garlic salt
- Heat the oil in a wok on medium-high heat
- Dredge the aubergine strips first in the flour mixture, then the egg and lastly coat in the breadcrumb mixture
- Fry in the wok until aubergine are golden brown and tender. Drain on a kitchen towel
- Serve with your choice of dipping sauce
