Chicken & Chorizo Rice

Instructions

  1. Heat the olive oil in a large saucepan and fry the chorizo on high heat for 1 minute
  2. Add in the onion and fry for a further minute
  3. Add in the chicken and garlic paste and cook for a further 5 minutes
  4. Add in the green pepper and rice and stir until properly mixed
  5. Add in the chicken stock and stir
  6. Cover the pan with a tight-fitting lid, turn the heat down to its lowest setting and allow to cook for a further 12 minutes
  7. Turn the heat off, but keep the lid in place and allow to stew for a further 12 minutes
  8. Remove the lid and good stir with a fork, ensuring the water has been fully absorbed
  9. Serve and enjoy!
