Ingredients
- 450g plain flour
- 3 tsp Tropical Sun Baking Powder
- ⅓ tsp salt
- 2 tbsp Tropical Sun Demerara Sugar
- 100g Tropical Sun Creamed Coconut, grated
- 100g butter
- 40g white vegetable shortening
- 300ml Tropical Sun Coconut Milk
Instructions
- Preheat the oven to 180°C/ 350°F/ Gas Mark 4 and grease a baking sheet
- Sift the flour, baking powder and salt into a bowl
- Add in the sugar and grated coconut
- Add in the butter and vegetable shortening, mixing it all together with your fingers
- Slowly add in the coconut milk and mix together to form a dough. Knead for 5 minutes until the dough is smooth and then leave to rest for 1 hour
- Shape the dough into a ball and roll out to a disc 2.5cm thick. Place on the greased baking sheet and bake for 20-30 minutes or until risen and golden and the bottom sounds hollow when tapped
