Coconut Bake

Instructions

  1. Preheat the oven to 180°C/ 350°F/ Gas Mark 4 and grease a baking sheet
  2. Sift the flour, baking powder and salt into a bowl
  3. Add in the sugar and grated coconut
  4. Add in the butter and vegetable shortening, mixing it all together with your fingers
  5. Slowly add in the coconut milk and mix together to form a dough. Knead for 5 minutes until the dough is smooth and then leave to rest for 1 hour
  6. Shape the dough into a ball and roll out to a disc 2.5cm thick. Place on the greased baking sheet and bake for 20-30 minutes or until risen and golden and the bottom sounds hollow when tapped
