Gari Foto

Foto is derived from the Ewe word ‘fortor’, meaning to mash up!

  • 370g Tropical Sun Gari
  • 120ml water
  • 120ml palm oil
  • 3 medium onions, chopped
  • 2 tsp Tropical Sun Minced Red Chilli Paste
  • 2 tsp Tropical Sun Mild Madras Curry Powder
  • 400g Tropical Sun Chopped Tomatoes
  • 200g Tropical Sun Mackerel in Tomato, chopped  
  • 15g tomato paste
  • 2 carrots, chopped
  • 2 spring onions, chopped
  • 1 egg, scrambled in Tropical Sun Olive Oil
  • Salt and Tropical Sun Ground Black Pepper to taste


  1. Gently sprinkle the gari with the water, stirring with a fork to ensure it is evenly moist. Cover and leave to stand for 15 minutes
  2. In a large saucepan, heat the palm oil and simmer the onions, chilli paste and curry powder, until the onions are a lightly browned
  3. Add in the chopped tomatoes and simmer for a further 2 minutes
  4. Add in the mackerel, tomato paste, carrots and spring onions and simmer for another 5 minutes
  5. Add in the scrambled egg whilst stirring the mixture continuously
  6. Fluff the gari with a fork and then slowly fold it into the mixture, scoop by scoop  
  7. Season with salt and pepper
  8. Serve and enjoy!
