West African Peanut Soup - Tropical Sun






    1. Blend together the onion, pepper, tomatoes and ginger paste
    2. Place the chicken into a pot and cover with blended mix and and chicken stock. Bring to a gentle boil, add in the bay leaf and rosemary and then reduce to simmer for 15 minutes
    3. In a separate saucepan, gently melt the peanut butter with a little water to create a smooth sauce
    4. In a separate pan, boil some water, add in some salt and cook the okra for 4 minutes. Remove from the water and set aside on a plate
    5. Add the peanut butter sauce to the rest of the soup and simmer for 20 minutes - until oil rises to the surface of the soup
    6. Remove the bay leaf and rosemary from the soup and add in the okra
    7. Serve and enjoy!
