Ingredients
- 170g butter
- 200g caster sugar
- 2 eggs
- 1 tsp Tropical Sun Vanilla Essence
- 200g self-raising flour
- 1 tsp Tropical Sun Baking Powder
- 250g Tropical Sun Guava Jelly
- 150g fresh cream
- Icing sugar
Instructions
- Preheat the oven to 190°C/ 375°F/ Gas Mark 5
- Cream the butter in a mixing bowl and gradually add in the sugar, beating the mixture until it is smooth and creamy
- Whisk the eggs together in a cup and add into the mixture a little at a time, keeping a smooth and creamy consistency
- Add in the vanilla extract
- Sieve in the flour and baking powder and mix together to form a batter
- Divide the batter mixture between two grease-lined cake tins and put into the middle of your pre-heated oven
- Bake for 45-60 minutes, or until until risen and golden
- When cooked, turn the sponges out of the tins and leave to cool completely
- Once cooled, turn one sponge upside down on a plate and generously spread the guava jelly and cream over the entire top surface
- Put the other sponge on top to form a cake sandwich and dust with icing sugar
- Serve and enjoy!
