Guava Sponge Cake

A truly exotic sweet treat

  1. Preheat the oven to 190°C/ 375°F/ Gas Mark 5
  2. Cream the butter in a mixing bowl and gradually add in the sugar, beating the mixture until it is smooth and creamy
  3. Whisk the eggs together in a cup and add into the mixture a little at a time, keeping a smooth and creamy consistency
  4. Add in the vanilla extract
  5. Sieve in the flour and baking powder and mix together to form a batter
  6. Divide the batter mixture between two grease-lined cake tins and put into the middle of your pre-heated oven
  7. Bake for 45-60 minutes, or until until risen and golden
  8. When cooked, turn the sponges out of the tins and leave to cool completely
  9. Once cooled, turn one sponge upside down on a plate and generously spread the guava jelly and cream over the entire top surface
  10. Put the other sponge on top to form a cake sandwich and dust with icing sugar
  11. Serve and enjoy!
