Instructions

 

  1. Heat the oil in a large frying pan on a medium heat, then add in the spring onion, onion, thyme, garlic granules, curry powder and pimento, stirring continuously, cooking until the onions are lightly browned
  2. Stir in the coconut milk and water and mix well
  3. Add in the potatoes and sweet potatoes and simmer for 10 minutes, or until the potatoes start to soften
  4. Lower the heat and add in the pumpkin, cauliflower, red pepper and green beans
  5. Cover and simmer for another 10 minutes, or until all of the vegetables are cooked
  6. Garnish with coriander
  7. Serve and enjoy!
