Ingredients
- 4 tbsp Tropical Sun Pure Coconut Oil
- 1 spring onion, chopped
- 1 onion, chopped
- 1 tsp Tropical Sun Dried Thyme
- 1 tsp Tropical Sun Garlic Granules
- 2 tsp Tropical Sun Mild Caribbean Curry Powder
- 3 tsp Tropical Sun Ground Pimento
- 250ml Tropical Sun 100% Natural Coconut Milk
- 150ml water
- 300g potatoes, diced
- 450g sweet potatoes, diced
- 350g pumpkin, seeded and diced
- ½ cauliflower, chopped
- 1 red pepper, chopped
- 200g green beans
- Handful of coriander, finely chopped
Instructions
- Heat the oil in a large frying pan on a medium heat, then add in the spring onion, onion, thyme, garlic granules, curry powder and pimento, stirring continuously, cooking until the onions are lightly browned
- Stir in the coconut milk and water and mix well
- Add in the potatoes and sweet potatoes and simmer for 10 minutes, or until the potatoes start to soften
- Lower the heat and add in the pumpkin, cauliflower, red pepper and green beans
- Cover and simmer for another 10 minutes, or until all of the vegetables are cooked
- Garnish with coriander
- Serve and enjoy!
