Jamaican Chocolate Cake

One for the chocoholics!

  1. Preheat the oven to 165°C/ 325°F/ Gas Mark 3
  2. Grease a 20cm square baking pan and lightly dust it with flour
  3. Sieve the flour, baking powder and mixed spice into a mixing bowl
  4. Add in the butter, icing sugar and eggs
  5. In a separate bowl, mix together the cocoa and the hot water and then add it to the flour mixture, stirring until it is of a smooth consistency
  6. Spoon the mixture into the baking tin and bake for 45 minutes, or until the cake has risen and is shrinking from the edge of the pan
  7. Remove from the oven and turn onto a wire rack to cool
  8. In a saucepan on a medium-low heat, combine the granulated sugar and water
  9. Once the sugar has dissolved, add the cinnamon sticks and boil for 5 minutes
  10. Remove from the heat, discard the cinnamon sticks and add in the rum
  11. Place the cake on a serving plate and spoon the syrup on top. Leave to stand for 2 hours
  12. Break the chocolate into pieces and melt in a pan on a low heat. Spread the melted chocolate evenly over the cake
  13. Leave to stand for at least 2 hours
  14. Serve and enjoy!
