Jerk Chicken

Ingredients

  • 2 tbsp Tropical Sun Jerk Seasoning (per chicken piece)
  • 2 tbsp Tropical Sun Jerk Seasoning Paste (per chicken piece)
  • 4 chicken legs, skin on, cut into drumsticks and thighs

 

Instructions

  1. Score the chicken on both sides and rub each piece with the jerk seasoning paste and then the jerk seasoning powder, ensuring you get maximum coverage, including within the slit
  2. Marinade in a fridge for at least 2 hours or ideally overnight
  3. Pre-heat the oven to 200°C and cook the chicken in a lightly oiled baking tray for 20-25 minutes, or until it’s cooked through
  4. For crispy skin, finish off on the grill or barbeque for a few minutes
