Jerk Seitan Skewers

Jerk Seitan Skewers

Dating back to 6th Century China, Seitan is a meat substitute that is loved across many Asian countries. High in protein, it is increasingly popular with vegans and vegetarians.

The folks over at PlantBased Mag have put together this unique and enticing recipe, marrying heat from our jerk seasoning with a cooling zesty lime yogurt sauce. Yum! Fire up the BBQ, or the grill if that is not an option, and get cooking!  

Ingredients

For the seitan:

150g (1 cup) vital wheat gluten

2 tbsp gram flour

2 tsp Tropical Sun Onion Powder

2 tsp Tropical Sun Garlic Powder

1 tsp Tropical Sun Dried Thyme

1 tsp Tropical Sun All Purpose Seasoning

160ml (⅔ cup) water

2 tbsp soy sauce

1 tbsp Tropical Sun Vegetable Oil

2.4ltr (10 cups) Tropical Sun Vegetable Stock

For the jerk marinade:

1 tbsp Tropical Sun Jerk Seasoning – Dry

1 tbsp Tropical Sun Coconut Treacle

1 tbsp soy sauce

1 tbsp Tropical Sun Vegetable Oil

For the skewers:

1 red pepper, chopped into chunks  

1 green pepper, chopped into chunks

1 yellow pepper, chopped into chunks

For the lime yogurt:

4 tbsp yogurt (vegan, if desired)

2 limes, juiced and zested

1 tbsp maple syrup

Method

  1. In a bowl, mix together the vital wheat gluten, gram flour, onion powder, garlic powder and thyme.
  2. Pour in the water, soy sauce and vegetable oil. Mix together to form a dough, then knead for 5 - 6 minutes until the dough becomes stretchy. Split the dough into 16 even meatball-like chunks.
  3. In a large saucepan, gently simmer the stock and then add in the seitan, simmering for a further 45 minutes. Remove the pan from the heat and leave the seitan to cool in the stock.
  4. In a bowl, mix together the jerk seasoning, coconut treacle, soy sauce and vegetable oil
  5. Remove the seitan from the stock and add it into the bowl, marinating for 30 minutes.
  6. Skewer the seitan and chunks of pepper, alternating between them. Set aside.
  7. In a small bowl, mix together the yogurt, lime juice and zest and maple syrup for the lime yogurt sauce.
  8. Cook the skewers on a BBQ or grill for approximately 3-4 minutes on each side, or until cooked through and lightly charred on the outside.
  9. Serve and enjoy!
