  1. In a bowl, mix together the ginger paste, cayenne pepper, salt, star anise, scotch bonnet pepper, crayfish stock powder and onion
  2. Gradually add in the plantain,  tossing together with the spice paste to ensure every piece of plantain has been covered
  3. Let it rest for about 10 to 20 minutes to absorb the flavour
  4. Heat up the oil in a large skillet until hot, but not smoking
  5. Fry the plantain cubes in batches, turning once, until golden brown, - about 5 minutes. Do not overcrowd the pan as it will cause the plantain to be soggy and absorb excess oil
  6. Using a slotted spoon, transfer the fried plantains to a plate lined with kitchen paper
  7. Serve and enjoy!
