Mixed Bean Salad

A nutritious, protein-packed vegetable medley 

Serves: 4 | Prep: 10 mins | Origin: South America | Suitability: Vegan

Tropical Sun Mixed Bean Salad




  1. Heat your pan on a medium heat - and once heated, added in the olive oil and allow to heat for 30 seconds 
  2. Add in the onion and ginger paste and sauté for 2 mins
  3. Add in the paprika, cumin, chili powder and tomato juice and simmer until the juice has reduced by half, for approximately 5 mins, stirring continuously 
  4. Add in crab eye beans, kidney beans and sweetcorn and continue to cook until heated through; approximately 3 mins  
  5. Remove from the heat and gently stir in the lime juice and coriander 
  6. Serve warm and enjoy!
