Mixed Bean Salad

Ingredients

 

  • 30ml Extra Virgin Olive Oil
  • 1 medium onion, finely chopped
  • 1 tbsp Tropical Sun Minced Ginger Paste
  • ½ tsp Tropical Sun Ground Cinnamon
  • ¼ tsp Tropical Sun Ground Nutmeg
  • 2 sprigs coriander, chopped
  • 1 tsp Tropical Sun Ground Jeera (Cumin)
  • ½ tsp Tropical Sun Chilli Powder
  • 300ml tomato juice
  • 400g Tropical Sun Crab Eye Beans, drained and washed  
  • 400g Tropical Sun Red Kidney Beans, drained and washed
  • 60ml lime juice
  • Salt and Tropical Sun Black Pepper to taste

 

Instructions

  1. Heat the olive oil in a pan and sauté the onion and ginger paste for 2 minutes
  2. Add in the cinnamon, nutmeg, coriander, cumin, chilli powder and tomato juice and stir for  5 minutes
  3. Add in crab eye beans and kidney beans  
  4. Remove from the heat and gently stir in the lime juice
  5. Serve warm and enjoy!
