Peri Peri Potatoes

So nice they named it twice!

  1. Preheat the oven to 220°C. Wash the potatoes and cut them into bite-sized chunks
  2. Parboil them in a pot of boiling salted water for about 15 minutes
  3. Drain and then toss into the pot to roughen the edges
  4. Drizzle the oil into a large shallow roasting tray and place in the oven to heat up for 10 minutes, or until the oil is smoking. Remove the tray from the oven and spread the potatoes in the hot oil
  5. Toss them in the tray to ensure that all chunks are coated with oil
  6. Sprinkle the peri-peri seasoning, all purpose seasoning, garlic powder and black pepper over the potatoes
  7. Return the roasting tray to the oven - on the highest shelf. Cook for about 45 minutes or until the potatoes are crispy and crunchy on the outside and soft and fluffy on the inside
  8. Serve and enjoy!
