Pumpkin Fritters

Crunchy on the outside, soft on the inside!

Instructions

  1. Mix the cornmeal, flour, baking powder and cumin in a bowl
  2. Add in the pumpkin, spring onion and scotch bonnet pepper and then fold in the egg
  3. Gradually add in the water (you may not need it all) until the mixture forms a firm batter
  4. Put the corn oil into a saucepan on high heat
  5. Make small, firm patties with the batter and carefully lower them into the hot oil using a slotted spoon. Cook until golden brown on the outside
  6. Drain on kitchen paper to remove excess oil
  7. Serve and enjoy!
