Red Red

A deep red black eyed bean stew

Instructions

  1. Blend together the ginger paste, garlic paste, plum tomatoes, tomato paste, paprika, crayfish stock, scotch bonnet pepper and one of the onions into a smooth pulp and then set aside
  2. Heat the palm oil in large saucepan over a medium heat, and once hot, sauté the remaining onion for 5 minutes, stirring often
  3. Add in the mixture from the blender and simmer for a further 5 mins
  4. Add in the crayfish and 250ml of the crayfish stock and simmer for 10 minutes, stirring occasionally
  5. Add in the black eyed beans and the remaining stock, bring to a boil and then reduce the heat to simmer for another 15 minutes
  6. Garnish with spring onions
  7. Serve and enjoy!
