Ingredients
- 1 onion, chopped
- 2-3 spring onions, chopped
- 2 tsp Tropical Sun Minced Garlic Paste
- ½ scotch bonnet pepper, chopped
- 50g Tropical Sun Creamed Coconut
- 1 tsp salt
- 1 tsp Tropical Sun Ground Black Pepper
- 400g tin of Tropical Sun Red Kidney Beans, drained and rinsed
- 500ml water
- 1 tsp Tropical Sun Dried Thyme
- 500g Tropical Sun USA Easy Cook Rice, washed
Instructions
- In a saucepan on medium heat, simmer the onions, spring onions, garlic paste, scotch bonnet pepper, creamed coconut, salt and pepper for 3 minutes
- Add in the red kidney beans and gently stir into the mixture, simmering for 2 minutes
- Add in the water and bring to a boil
- Add in the rice then reduce the heat to medium-low and cover
- After 15 minutes, check to see if the rice is cooked. If needed, add more water
- Serve and enjoy!
