Ingredients
- 1 egg white
- 60g all-purpose flour
- 60g Tropical Sun Cornmeal (Fine)
- ½ tsp Tropical Sun Baking Powder
- 230ml water, ice cold
- ½ tsp salt
- 250g skinless, boneless chicken, diced
- 400ml Tropical Sun Sunflower Oil
- 2 tsp Tropical Sun Minced Garlic Paste
- 60ml Tropical Sun Sweet Chilli Sauce
- 1 tbsp lime juice
- ½ tsp salt
- ½ tbsp Tropical Sun Sesame Seeds
- ¼ bunch coriander, finely chopped
Instructions
- For the batter, mix together the egg white, flour, cornmeal, baking powder, water and salt
- Add in the chicken, ensuring each piece is properly coated in batter
- Heat 350ml sunflower oil in a wok or skillet and once hot, deep-fry the chicken until golden brown and then set aside on a kitchen paper-lined plate
- Clean the wok/ skillet, add in the remaining 50ml of sunflower oil on a medium heat and fry the garlic paste until lightly browned
- Add in the fried chicken, sweet chilli sauce, lime juice and salt, ensuring that each piece of chicken is properly coated in sauce
- Garnish with sesame seeds and coriander
- Serve and enjoy!
