Thai Sweet Chilli Chicken

Tropical Sun Sweet Chilli Sauce


  • 1 egg white
  • 60g all-purpose flour
  • 60g Tropical Sun Cornmeal (Fine)
  • ½ tsp Tropical Sun Baking Powder
  • 230ml water, ice cold
  • ½ tsp salt
  • 250g skinless, boneless chicken, diced
  • 400ml Tropical Sun Sunflower Oil
  • 2 tsp Tropical Sun Minced Garlic Paste
  • 60ml Tropical Sun Sweet Chilli Sauce
  • 1 tbsp lime juice
  • ½ tsp salt
  • ½ tbsp Tropical Sun Sesame Seeds
  • ¼ bunch coriander, finely chopped


  1. For the batter, mix together the egg white, flour, cornmeal, baking powder, water and salt
  2. Add in the chicken, ensuring each piece is properly coated in batter
  3. Heat 350ml sunflower oil in a wok or skillet and once hot, deep-fry the chicken until golden brown and then set aside on a kitchen paper-lined plate
  4. Clean the wok/ skillet, add in the remaining 50ml of sunflower oil on a medium heat and fry the garlic paste until lightly browned
  5. Add in the fried chicken, sweet chilli sauce, lime juice and salt, ensuring that each piece of chicken is properly coated in sauce
  6. Garnish with sesame seeds and coriander
  7. Serve and enjoy!
