Vietnamese Cauliflower

Yummy vegan tofu and rice dish

Instructions

  1. Heat the oil in a wok or skillet and then add in the shallots and garlic paste and sauté for 1 minute
  2. Add the soy sauce and tomatoes and cook for another 3 minutes
  3. Add in the cauliflower, onion, spring onion, vegetable stock, lemon juice and sugar
  4. Reduce the heat and cook for 10 minutes, or until the liquid has absorbed and the cauliflower is tender
  5. Garnish with coriander
  6. Serve and enjoy!
