Super-callaloo-ilistic-expialidocious!

You may have eaten it as a side dish in a hearty Jamaican meal, cooked with onions, garlic, thyme and fiery scotch bonnet peppers, or perhaps tasted it in a warming West Indian pepperpot soup. For many years, it remained a secret of the Caribbean and South American communities, but food-lovers worldwide are discovering callaloo, and its popularity is rocketing as plant-based living and adventurous cooking become increasingly widespread.

Tinned within moments of being chopped, it preserved the natural way: through blanching and a dash of salt.
