If you’re going to leave a special treat out for Santa this year (you should!), then make it this Christmas Crumble! Tangy and sweet, this festive treat requires only a few ingredients and tastes best when warmed through and served with custard, cream or if you’re feeling especially naughty… ice cream!
INGREDIENTS
For the filling:
300g fresh or frozen cranberries
4 apples - peeled, core removed and chopped into small pieces
200ml water
Juice and zest of 1 large orange
4 heaped tbsp Tropical Sun Organic Coconut Sugar
1/2 tsp Tropical Sun Ground Cinnamon
A generous grating of Tropical Sun Whole Nutmeg
For the crumble topping:
150g jumbo oats
75g mixed nuts - roughly chopped - I used pecans and hazelnuts, but almonds and walnuts will work too
4 tbsp maple syrup
3 tbsp melted Tropical Sun Coconut Oil
1 tsp Tropical Sun Ground Cinnamon
METHOD

Preheat the oven to 180 degrees Celsius.

Add the cranberries and chopped apples to large pan together with the water, orange juice and zest. Cook on a medium heat for 10-15 minutes until the cranberries start to burst and the apples have softened.

Add in the sugar, cinnamon and nutmeg. Stir everything to combine and cook for another 5 minutes. If at any point the fruit mixture starts to stick to the pan, add small amounts of water and stir.

To make the crumble topping, add all the ingredients into a large bowl and mix until well combined.

Transfer the stewed fruits to a baking tin. Add the crumble mixture on top and spread it evenly across the tin.

Bake in the oven for 20 minutes until the crumble is slightly golden.

Serve while warm with custard, cream, or, if it's a 'heavy-eating' kinda day, ice cream!
