2 cups (400g) cooked Tropical Sun Golden Stella Rice
1 green bell pepper, diced
1 scotch bonnet pepper, diced
½ English cucumber, diced
1 x 400g can sweet corn, drained
1 x 400g can Tropical Sun Kidney Beans, drained and rinsed
1 small red onion, diced
½ bunch of coriander or parsley, roughly chopped
1/4 cup (57g) lime juice (plus more to taste)
1/3 cup (76g) olive oil
1/4 tsp Tropical Sun Smoked Paprika
1/2 tsp Tropical Sun Cumin Powder
1/2 tsp Tropical Sun Garlic Powder
3/4 tsp sea salt
Ground alligator pepper or black pepper (to taste)
- Place rice into a pot on the hob on medium/ high heat and add 4 cups of water. Allow to boil and then turn the heat off and add the lid. Allow to cook in its steam for 15 minutes. Fluff with a fork and allow to cool.
- Add the rice, bell pepper, scotch bonnet pepper, cucumber, corn, beans, red onion and coriander into a mixing bowl. Mix all together, then add in the lime juice, olive oil, honey, spices, salt and pepper and mix together.
- Serve and enjoy!
