Everyone loves a cookie or three! If you have young children and want to teach them the basics of baking, then this is the perfect recipe to prepare with them. Lots of fun decorating the cookies!
70g icing sugar
65g caster sugar
95g butter (vegan, if preferred)
2 tsp Tropical Sun Vanilla Essence
150g self-raising flour
1/2 tsp Tropical Sun Ground Cinnamon
1/4 tsp Tropical Sun Ground Nutmeg
Frosting:
250g butter (vegan, if preferred)
300g icing sugar
1 tsp Tropical Sun Vanilla Essence
Method
- In a large mixing bowl, combine the icing sugar, caster sugar and butter and mix well using a wooden spoon to combine. Once the mixture is pale and fluffy, stir in the vanilla essence.
- Sift the flour and spices and fold them into the wet mixture, then use your hands to bring everything together into a smooth dough. If your cookie dough is slightly too sticky, you add small amounts of extra flour gradually to reduce the stickiness.
- Shape the dough into a ball, then wrap in cling film and place into the fridge for 15 minutes to chill.
- Preheat your oven to 180c fan and line a baking tray with baking paper.
- Roll out the dough onto a clean, lightly floured surface, then cut out your Christmas tree shapes.
- Carefully transfer these onto your baking tray and place into the oven for approximately 12 minutes, until lightly golden.
- Remove from the oven and allow to cool completely. Then, transfer to a wire rack.
- Meanwhile, for the buttercream frosting, beat the butter in a stand mixer or using an electric hand whisk. Gradually add in the icing sugar and vanilla essence and continue to mix until completely smooth and creamy.
- Transfer the frosting mix into a piping bag and pipe onto each cooled cookies. Sprinkle with some caster sugar or Christmas sprinkles!
- Serve and enjoy!
